Sunday Dinner


If I had to pick my ultimate favorite favorite food in the whole world it would be salad. There is just so much you can do with it. So many varieties. So many different options. Salads are pretty much limitless and I never ever get bored. And because Taylor isn't home for dinner I have to get creative. I don't want his food to be cold and stale or soggy when he finally gets to eat... I want him to have something fresh and delicious even if I ate dinner 3 or 4 hours before he gets home. So this is my solution for salad. 





Salad is one of those foods that goes soggy right before your eyes! You pretty much have to eat it right then or else you throw it away. But this way, the salad dressing is separated from the lettuce and everything stays perfect and fresh for when you are ready to eat. 
This salad is one of my favorites right now. 

Southwestern Chicken Salad
Ingredients:
BBQ Sauce
Ranch
Spinach/Lettuce
Cilantro
Chicken
Corn
Black Beans
Cheese
Avocado

Directions: 
1) Grill the chicken



2) Heat up the corn and black beans. I usually just mix them together. 



3) Get your mason jars and pour as much BBQ Sauce you want on your salad on the very bottom. Then same thing with Ranch right on top of it. 

4) I then crumble up some cheese and sprinkle it in as the next layer.

5) Once the corn and black beans are done and cooled off a little bit I pour however much of that mixture I want in my salad. 

6) Add your chicken. 

7) I then add some cilantro.




8)Now I get my lettuce and spinach mixture and push however much I want down into the jar. 

9) Avocado is the tricky part... Once you cut it, it tends to brown pretty fast. If I am out and about I don't put it in, but if I am home I will cut it up right before I want to eat it. And wallahh you got the most delicious salad!
